The other day I noticed that the pictures that end up on my Photobucket look a lot different than they they do when I open them up in iPhoto or any other program on my computer... I just started shooting in RAW so I was thinking that this might have something to do with it...
But I would really like to know what is the best free upload/hosting service. I've tried Photobucket and MyPhotoAlbum and both times the pictures come out wierd. It's like they don't reflect the changes I made to them in iPhoto, like contrast and sharpness.

You might want to look into Flickr if you are not willing to pay for services.
I am also a Zenfolio member and would recommend it to you without hesitation, the yare awesome at what they do.

Personally, I like Picasa better than Flickr for simplicty and
convenience.
Try http://picasaweb.google.com
Other free sites I liked
http://my.opera.com (300 MB limit)
http://www.webshots.com
Among paid sites, pbase.com is impressive, though they give less storage compared to competetors for same price.
smugmug.com is also good.
