When trying to set my WB through a white/grey card, it doesn't quite fill the viewfinder. To get around this I used spot metering. Is that ok and would it still work the same?
I'm also assuming it doesn't need to be in focus.

You don't need to select spot metering unless you're having trouble getting a reasonable exposure with other modes.
The subject for custom WB needs to fill the center spot metering circle (or more, of course). That's all. As you say, focus isn't necessary.
In my 30D manual it's discussed on page 65.

The metering is irrelevant since the exposure doen't have to be correct. It can be over or under, anything as long as it's not clipped. Similarly, the target doesn't have to be 18% grey. It can be any shade of grey, as long as it is really neutral gray.

You only have to fill the circle. Metering (and the mode) is irrelevant as long as you're not blinking.
