This was shot on an overcast day.
D-rebel, 100-400 4.5-5.6L, ISO 1600, F/8, 1/1250sec. 250mm Manual.
What would you recommend for settings that should have been used to get the dog in focus too?

To get the dog in focus you would need a large DOF. You could try increasing your aperture or put the camera in landscape mode.

Your AF just picked up the sheep instead. You can pump up the f-stop to get better DOF but that might not do it. You could try focusing in between, but that might do it. With the distance between the subjects you might have to settle for one or the other.
