I'm still learning how to use my camera which is a Canon Powershot S1 IS. The first pic is a sunset over Fox Island near Gig Harbor Washington. The second is a shot through the forest while hiking up Mt. Si in the Cascade Mtn range which is also in Washington. Hope you like. Criticism is very welcomed.
I think I should have used a fill flash on the second, what do you think?

Nice.
A Fill-flash would have been of no use in the second as the tree are too far away.
You shouldn't have shot the sun, but move a bit to the left, so that the sun would have been hidden behind the tree. If the trees had been too dark then, you can use exposure compensation by adding 1 or 2 stops.

No 1 has potential. But :
I'd crop the sea in half
the DOF seems a bit short...the trees at the top of the hill look OOF (IMO)
