And then make the hats in the picture red?
Is this possible? If so how?

Technically, this should be in the post-processing forum, but I'll take a stab at it. It depends on what software you're using. If you're using Photoshop, you could always check out Action Central (http://www.atncentral.com/download.htm) and search for Sepia actions.

Duplicate layer > desaturate / grayscale top layer using method of your choice > tick colorize & select suitable sepia tone with the slider > carefully erase hats from top layer.

This assumes the hats are already red, if not just use channel mixer controls to set the tone and colour you want.
