I've seen reference made to having a "hack" performed on a 300D.
What is this refering to?

The "hack" is an unauthorized upgrade to the firmware that enables certain features that were omitted in the 300D (Rebel).Some of those features include FEC and Mirror lockup.
If you do a search for "Rebel hack", you'll get roughly 5 pages of listed threads that deal with the subject.

How might having this done affect the warranty?
What are the benefits of having it done? I'm not sure what "FEC" is.

Benefits are that the functions are improved and more funtions introduced. The FEC is 'flash exposure control' it allows the camera to have a "pre" shot flash to calculate the needed output for a given situation.
The warranty (although most people say Canon will still service them) is officially void if you hack the firmware. If the camera is a year old, no loss. If it's less than a year old it's a descision you have to make based on your needs for the camera.

Actually, FEC is "flash exposure compensation" ... and it works similar to the regular exposure compensation (i.e., you can over or under expose flash images in 1/3 stop increments). It adjusts the flash output.

Can it be assumed that the "Hack" is reversible by reloading the original firmware?
And are there any known cases of attempting to install the "Hack" that made the camera unusable?

Yes and
No (barring the power going out during the load - I haven't heard of this happening, but it's possible).
