I know you guys probably get this question a lot but.. I am fairly confident in my photography however I am clueless when it comes to lighting. I have the 580 EX Flash that I use with my 5D but I want to expand my lighting. I need a simple set up that isn't super confusing. I want to shoot skateboading and also portraits I don't need a studio set up something that can be used inside or out. Maybe an umbrella or a softbox? I am trying to ask for some stuff for Christmas so any help would be much appreciated!

sounds like you are trying to get your flash off your camera, if so i would look at what you need to do to achieve that first then look at the modifires. so you'll need....

a way to fire it, which can be remote triggers are pc cabling. remotes being the best option.

light stand with adapter to hold your flash and an umbrella when you add one to your system

after that, umbrellas and softboxes etc.

Besides the obvious light stand and umbrella (this kit has two but shows you what you need - http://www.bhphotovideo.com/c/product/425220-REG/Impact_DFUMK_Digital_Flash_Umbrella_Mount.html) you will need a way to fire the flash. I would recommend Cybersync radio units (http://www.alienbees.com/cybersync.html#cst) from AB. They are reasonably priced for their dependability and range.

yeah, you'll want to get your flash off camera. The most automated way is to use wireless E-ttl which sets your flash automatically. Unfortunately, you'll be buying either another flash or a canon wireless transmitter.

For manual flash control, you can buy a radio transmitter or pc sync cables. Those vary widely in cost.

Other than that, you'll probably want a stand and umbrella or two, but those are very cheap.
