I need some advice on this. Took a bunch of pics this weekand and this problem reoccurred several times.
I assume this is happening because the camera is focusing on the background. How can I correct this? The subject is in the center?

Obviously you can't correct it after the fact. What might have happened is that the sensor for the focus wasn't set properly. Depending what kind of camera you can set this sensor to the left, middle, right or average between the 3.

Never used one, but since you have one WITH the manual I suggest you sit down and read. A guideline might be the EXIF-data that is stored with each picture. You might have taken all these pictures on the wrong setting?

How close were you to the subject? You may have been too close for "normal" focusing mode and needed to be in macro mode. Can't know for sure without knowing the shot information. However, if that's the case, you'd have been better off stepping back and zooming in, rather than using macro mode.
P.S. I've read that the G1 and some other digicams do a better job focusing on people if you shoot vertically instead of horizontally. Not sure why, but it seems to work for me.
