I keep reading about flash stands for flashes like the 580EX.. How do I find them on the web so I can research them? I have no clue how and where to buy these stands for my flash? what are they called? are they just regular light stands with a flash attachment to mount your flash on?

If you have trouble finding light stands in the B&H site, then there is a problem.
As long as you are shooting a subject pretty low, a standard tripod will work. In fact, I use my oldest, flimsiest tripod for this, since an EX flash does not have much mass. However, that will get it up to only 5-6 feet. If you need something higher, then you'll need a light stand.
If you need portability, then you'll find a lightweight/folding tripod/lightstand. On the other hand, if you were setting up a budget studio, then you can find a heavier stand at Home Depot. Often they will sell a 500 watt quartz halogen worklight on a steel stand for a very cheap price. I got some of those and used the stands to hold flashes and backdrops.

I use a product B&H lists as a "Umbrella Bracket". It mounts on top of a light stand & probably a tripod, I suppose. It has an accessory shoe (a non hot hotshoe if you like) and the head pivots. You could also use an umbrella, but don't need too.
They are really cheap. The last time I looked B&H sold three different brands of the same thing for exactly the same amount of money which I think was under $15.00. I'm guessing that there's a company out there who makes them and sells them to different companies who sell them under their own name.
I've got three of these things and use them for holding 420EX flashes when I'm doing wireless TTL stuff with them. Any shoe mount flash will fit.
Do a search on the B&H site for "Umbrella Bracket" and a whole bunch of these will pop up, with pictures too.

thanks guys. So I'm assuming that the hot shoe attachment just screws on the tripod like the camera would?

I either use a regular light stand or a tripod... but usually the light stand, especially if shooting into an umbrella.
**Edit: to your latest question...yes

Some light stands and all tripods have a standard screw on the top.
If you have an -EX flash unit, it comes with a little plastic foot plate that is hidden in the case. That foot will screw down on the standard screw. Then the -EX foot slides into the foot plate.
However, you have to see what light stands have to work with.
