First thing... background. Try to avoid shooting across the course. There's always something disturbing on side of course, and you definitely don't want to get that in frame. So shoot from bottom up. This way you get at least snow in back, and background doesn't look that cluttered.
Next to that timing. Try to catch skier in middle of turn not between the turns. It's much more dramatic this way, even if skiers are not top level athletes :)
I guess that's enough for start :)

good tips to keep in mind. but, for the "cross course" shooting, does bokeh work to calm the backgrounds? and, how about getting good at panning the shot? seems the blur would smooth out the distractions.

My skiing career was cut short by a tragedy. An hour after learning how to put skis on, I crashed into a big dark football player sized dood on the expert slope. It hurt.
