A lot of the non locked off 5DMKII footage I have seen seems to suffer from people using a stills tripod for video. I think you should budget for a decent video head and tripod to get smooth shots. If you can't, or don't want to afford it then keep all shots locked off. Don't try and move the camera on the tripod during a shot, it looks awful.

I got a Manfrotto 390 head as a compromise video and stills head, seems good but not as good as a super pro video head. I agree about locking the camera down, it also compresses better for the web as the data rates can be lower etc.

They key is using a nice tripod with a fluid head.
very light tripods will kinda defeat the purpose unless you put a sand bag on it.
Then practice practice practice until you can work that fluid head perfectly!
