anyone have a good article explaining what the white balance shift option is in these camera's, and / or personal experiance using the options?

The white balance shift is kinda like having a built in filter. For example, if you white balance a scene, and decided that you want a little warmth to the scene, you can +1 or +2 Magenta.

The other part of this is just to shoot RAW, and then make those adjustments after the fact. That way you can shoot on AUTO WB and then adjust in the DPP, or File Viewer, or Adobe Camera RAW. I have not shot JPGs since my first shoot with RAW. Yes, there is more post-processing required, but none of the changes done to the RAW file are permanent. You can still adjust the Magenta, as MBZE430 stated above, along with all the other WB controls, including the Kelvin temp and picking a white point.
