The B&H kit for the canon digital rebel XT includes the "Canon 18-55mm EF-S Lens." Is this just a general versatile lens? What does the "EF-S" mean? What sort of shooting will I be able to do with it.

EF-S is just the new mount for canon dSLRs. Only the Rebel, Rebel XT, 20D and the 10D if you're brave enough to do some hacking, can use it. It's just a smaller, lighter, lens design meant for these crop cameras.
I use my 18-55mm for a wide angle lens. It's actually not a bad lens optically, especially since it's <$100. You can shoot wide angle to medium telephoto. You can use it for portraits, for landscape/architectural shots. You, the photographer, is the only limit!
A good photographer friend once told me, the more limited you are with equipment, the more creative you become. So don't worry about it being 'cheap' or whatever, it's still a nice lens!

I also use the 18-55 for wide-angle.
