Just for a laugh, I set my 20D parameter settings to high for contrast, saturation and sharpness. Then took a picture with Raw+JPG, ran the raw through PS CS with proper settings.

When you see the two pictures below, you will see why you should leave the param settings alone and adjust things in PS CS (or similar). The 20D does a very crude job.

The first one is Jpg and the second one raw.

The picture was taken at ISO 1600, so there is a little noise in there.

What all did you do in post processing of the raw? Did you only do contrast, sharpening, and saturation like the camera has the ability to do or did you do more than that? Plus you're dealing with 12bit color with raw vs. 8bit and compression with the jpg.

Purely levels, a touch of contrast and sharpening.
