Senior Proof Books

I have client coming tomorrow to view a senior session. She has made it clear she wants a proof book. Question I have is does the proof book have to include all of the photos I have to show her (40-50 shots) or can I limit the proof book to 12 photos.

You show her what you want. This I would assume is most of the images you've edited and find presentable to your customer.
