Ive used my sisters for wakeboarding, surfing, boating and more and its really really convenient having a camera that can do it all in a small package. I even convinced my roommate to buy one and he loves it too. My birthday is coming around soon and before I buy one for myself....does Canon(or Nikon) ever plan on coming out with a similar product?

It's unlikely as Canon make underwater housings for most of their P&S cameras that are rated to 40 meters.

Why does it really matter? Get the olympus'. That's just like asking when Canon is going to put moving sensors in their dSLRs to add IS in-body to all their dSLRs. If they did, they'd render all their in-lens IS lenses unbuyable.
Other manufacturers did not have waterproof housings or lenses with IS built in, so they started things from "scratch" and have better products in that regard.
Canon really needs a leap of faith to break away from their business model of the past 20 years by putting moving sensors in dSLRs, weather sealing most of their dSLRs to a high standard, and making waterproof P&S models. Businesses don't continue to flourish unless they adapt as their market changes.
