Here are a couple from a market near my dwelling in South Korea...Neither has seen photoshop yet and I am not really sure what I would do with them anyway, that is why they are on here...
I know in the first one the whites of the crabs are slightly overexposed...not sure how I could have exposed the image much differently considering the light and keeping the subject in prime focus (a question for all of you)
The second one was actually a chop but in the picture it looks like he is sawing the fish...any suggestions on how I could make this a little more real in terms of motion ( keep in mind that I am not a fan of the blur effect at all)

Could you have changed the angle slightly and used an ND Grad to keep the highlights on the crabs? What did you meter, the scene? Maybe metering the table might help? It may underexpose the rest of the scene?
How about trying a much tighter crop. On both, zoom into the items on the table and just have the knives or the arms of the people in shot, or not at all.
Try different compositions as I think that may help you out. I personally am not a fan of side-on shots taken of people.
Have you got rear curtain sync, for flash, on your camera. Try using that on the "chopping" picture to get some motion.

I'd say get more of someone's face, that's what'd make a pic in this place IMHO.
