I was just wondering if anyone can help me out with this.

I own a 300D/Rebel and I've noticed when working in photoshop that the images are not 300 pixels/inch and I was wondering if theres anyway of correcting this. I'm using the largest file selection (when I can't shoot raw) So I was wondering if i'm doing something wrong?

Usually the resolutions are coming out at 180 or 210.(210 usually pretty decent for printing)

I was wondering if changing it in photoshop will degrade the quality of the picture or add noise or any nonsense of that nature.

Pixel depth is independent of resolution; the DRebel has a total of 3072 x 2048 = 6291456 pixels. Pixel depth, is determined by the size of the pixel, i.e. the smaller the pixels the more you get per inch . For prints, if you re-size the image in Photoshop - making sure that "resample image" is unchecked - anything above 300 ppi will yield good results on decent paper.
