Guys I'm confused but here's what I think I understand.
When I shoot a raw image the colour space is sRGB 8 bit colour depth. I can opt to save the image (using ths Canon software or 3rd party) as Adobe RGB 16 bit. I don't think I can select the colour space on the camera before I shoot.
Is this correct? Any help will be appreciated.

When you shoot RAW, the colour space setting on the camera has no effect. In the software on the computer that you use to convert the RAW image to a standard format (TIFF, JPEG), you can specify in which colour space you want the converted image.
Note that other parameters that you can set in the camera (sharpness, contrast, saturation) have no effect on the data in the RAW image. You set those settings in the RAW conversion software. Canon's RAW conversion software does however look at the camera settings (which are saved along in the header of the RAW file) and uses these as a starting point.
