Is a 15MB file large enough to produce quality images for publishing in coffee table style books? None of my images will be printed more than 5 by 7 inches.

Way more than enough, yes. But, you need to contact the publisher to find out their requirements too.

I save my prints in 1600x1200 JPEG format and that's good enough for 8x10 prints, each file not more than 1.5-2 MB.

Osh, publisher's requirements are very different from your own. Some publishers have a minimum of a 30mb file size at 300dpi. This is not the same as printing your home pictures on a bubblejet.
To make sure you meet minimum requirements, shoot in RAW and convert to TIF. It will give you the best results anyway. Jpeg's are not really suitable for quality publications.
