When shooting sports, its best to stay with the Manual setting, that way you can adjust everything you need, from the look of things the last shot was underexposed, it takes a while until your totally framiliar with the equipment your using, just relax a don't get too frustrated at yourself.

Aperture priority mode is fine for sports, just go for the widest your lens can go (ie: f2.8 or f4). Pick a higher ISO at least 400 so you can get a faster shutter speed. Any sport with real action needs at least 1/500, some of the best action is a 1/1600!

all good advice. The likely reason for the underexposure in the second shot is that when you were tracking the skier's white boots have gone through the centre of the frame and the AE sensor has detected this, thus speeding up the ss. If you notice, his boots are actually well exposed.

AV mode is fine for most sports. The best thing to do early on is keep AF on the centre point and set AF to AiServo. SS is the key and over 1/1000 is getting towards the sweet spot. Keep trying and you get the hang of it.

I shoot plenty of watersports + soccer (http://roywebber.zenfolio.com/).
If it's sunny, I use the following with my 40D 100-400 combo:
AV f8 for best sharpness
ISO 400-800

Shutter speed are usually around 1/2000 sec or higher, plenty fast enough to freeze the action.
