I've never taken a sunset before and happened to glance up out of the (very dirty) office window to see this. The colours were fantastic - the image is poor - what could I have done to get a better capture?

Potentially a good image, Damian.
Crop off the light area on top. Finish the top in dark cloud not bright sky.
Then trim off about 50 % of the dark base and
black out that bright light in the near foreground.
Voila. You've got a great shot.
Maybe you could brighten the colours a little but
it's really good as it is. I wouldn't overdo it.

If you wanted to simply capture this from your window.. it seems to me that you have done the job, and can tweak same by following the advice that has been provided.
But, I would do a lot more soul searching.
Why is this your first sunset ? What times of the year can you expect to see strong sunsets in your part of the world? What subjects are properly aligned with the sun that would lead to a knock-out sunset?
As I see it, you can always shoot through this window and capture 100O sunset variations of sky, cloud, and color. That is easy. If however you want to do great things, you will have to step outside the office box and make an opportunity happen.. perhaps at one of your castles, or with your son against a country hill. The great subject + great light = great image. (Like Henk's minaret).

The colours would have appeared richer if you had slightly underexposed the picture. I normally take several bracketed shots to get the best out of a sunset.
