Here is my first ever job at real editing...iMovie

figured most of the stuff out however the exporting has me a little troubled, I exported one at full 1080 HD and it came out around 630MB...500 is the limit for Vimeo so I had to redo it.

I followed their export example but my video looks like crap compare to what it should. any suggestions to what I should set everything as before exporting. Also what about deinterlacing (do I need to do it?)

You don't de-interlace the video since it is progressive to start with (unless the 5D MKII can shoot 1080i as well as 1080P).

If you can export it as a lossless (or near lossless) format, you could use Handbrake's target file size to get it to your desired file size. I'd use two-pass h.264 encoding if you are allowed to use it.
