Ok, this may sound like a dumb question but I am wondering how you do a nice self portrait when you have the camera on a tripod...how do you know exactly where to have your focus (eyes) on when there is no one sitting there? KWIM? :o

Prefocus on something where you are going to stand or be.
Then either remove it or let the object stay in the picture.

Put an autofocus target on your tripod in the same position where your sensor will be.
Position yourself in the frame as desired.
Focus on the autofocus target.
Replace the target with your camera (without changing focus).
Return to the exact same position you were in step #2.
Wireless remote trigger or timer. With this technique, missed focus may be caused by either not returning to the same exact position, or the difference between the distance to the sensor and the distance to your eye.

Definitely the easiest way. Hook the camera to your PC and you can see results without moving the camera around.
