Okay...taken with my old G3 a few years ago.
Macro setting, in a restaurant with no post processing

anyone know how to get the white plate to not be so "white"....besides using filters.

I have a 20D now so would appreaciate some advice

If you mean the next time you take a picture like this I believe you would have to expose your picture based on the light reading coming off of the plate itself.

As far as what you can do to it now that it has already been taken... I think you are out of luck if you have already "blown out" the detail.

Sorry, yeah I meant for the next time. So when you say the ligh reading coming off the plate, do you mean the white balance?

The contrast in the lighting is too high you need to diffuse the light coming in from the camera left as it has over exposed that side of the plate... Digital is like slide film it benefits from slight under exposure so take the image in RAW and use the 20D's compensation dial and dial in -1 stop... You can always adjust the exposure in its RAW state to do any fine adjustments but once the image is blown out you can't get it back without some serious cloning...

What you could do is use Custom WB. Fill the white plate in the frame and set your custom WB Then try and take your shot. Obviously make sure you use a clean plate to fill your frame :D

Also, shoot RAW so you can change the settings in PS (or your fave image editor) if you are not happy with the shot.
