I started asking some questions in the thread on people's favorite off-camera flash images but decided to start a separate thread.

My first question (though I'm sure responses will lead to more questions) is related to the AlienBees CyberSyncs. I assume if you use these products, you must set your flash power manually. How does one go about doing this? I have a 580EX II right now but I am considering getting a couple of the Vivitar 285HV or similar and the mounting hardware needed to use umbrellas, etc. Thoughts?

I do not own a 580ex, but i do have a 430ex and I think it should be similar.
Hit the mode button(to change from ettl to Manual)
Push the center(select) button
Use side-side arrow buttons to change flash power
press center(select) button again

On a 285hv, the power is adjusted on the front circular dial of the flash.

The hardware needed really depends on what you shoot, and what you need.
I use the Impact 2 light stand kit with umbrellas and umbrella adaptors. It is a very cost effective kit.

I know how to change the output on my flash in manual mode. My question was more (as it was in the other thread I mentioned) how do you know what power setting to use? Especially in a theoretical situation where you might have 2-3 flashes firing through various modifiers and different distances to the subject? I doubt pros shot and chimp until they get the settings right.

how do you know what power setting to use? ... I doubt pros shot and chimp until they get the settings right. You basically have two options:
1) Use a flash meter
2) Shoot and chimp.
