i have a rebel XT. in manual mode i can adjust the shutter speed via the dial and if i press the little exposure button and turn the wheel, it changes the aperture.

1.) how can i change the exposure setting??

2.) say i want to move from a shutter speed of 1/4000 to 30". is there any faster way then turning the dial? (same for going from a large aperture 1.8, to a small one like 29).

Did the camera come with a manual?

Actually I'm not understanding what you're asking.

My EOS 20D manual says "exposure compensation" is for creative zones but not Manual.

yeah it did come with a manual.
sorry.

what im asking is, how can i change the exposure settings like +-1, +-1/3 etc - while in manual mode.

By adjusting the Shutter or the aperture,. you are adjustimg the exposure.

This is how exposure works.

You only need exposure comp tp override the cameras autoexposure in AV or TV or "P",..

In manual,. since your shooting "manual" there is no "auto"exposure,. so there is nothing to compensate for...

oh. i wasnt sure of that. i thought that was always available. thaanks for clearing that up.
