If I wanted to take pictures of seashells on the beach and blur the background on a sunny day, what settings would I want to use? I am using a Canon EOS Rebel 1000d with 18-55mm lens.

Widest aperture and longest focal length. Although with your kit lens it may not be enough. You are going to have to get real close to the shells.

Make sure you take photos in the best possible light. This is usually at sunset/sunrise and the hour before/after.
