On a guided tour at Yorktown, VA, I shot the period actors as they told stories with a D60. One wore nearly all white (the surgeon) and another wore white pants and shirt, covered with a blue and red coat (the soldier). The up close and personal shots were underexposed, as were some of the moderate distance shots. I think I will try one and two stops overexposed next time just to see how it affects the image quality.

Adobe 5.0 LE seemed to correct for the underexposure using the adjust auto levels.

Yep, that's normal, have a read of this post (http://photography-on-the.net/forum/showthread.php?p=512601#post512601) for reasons why it happens.

One wore nearly all white For me, that's great! Take a CU of the white shirt & chimp the histogram to the right, then use that exposure for the rest of the shots. (On the M setting)

Chimp = Look at the LCD. Comes from "Look at my pic! Oh, oh, ah, ah!" ;-)
Look at the histogram of the pic to see that the exposure comes close to the right edge. When a FLAT white does that, you're getting the most out of your cam.

Why wouldn't you avoid the shirt altogether and do a CU of the face?

You want the brightest white (NOT a reflection off his glasses, chrome, sky, etc.) to be almost at the right edge of the histogram. Again...
