Personally - I like to make a duplicate layer of the colour photo I'm using, make it black & white through whatever method you wish to use (there are a few), easiest way is to simply click 'Desaturate' under Image/Adjustments. Then place a layer mask onto the B&W layer (Layer/Add Layer Mask/Reveal All). Then using the paintbrush set to black I paint over the areas I want to remain in colour.
This is a simple way, there are more complicated ways but they ultimately achieve the same result.
Hope this helps.
This is using Photoshop 7.0 by the way, but I think CS is the same for this.

I like to do a similar proceedure. Duplicate the photo. Make the top photo b/w (desaturate) and then use the eraser tool to erase the top layer, revealing the color below on the original pic.

Use one photo and create a new layer (I noticed he said duplicate photo and didn't know if you were getting lost on that one) , you can use the eraser tool.. but if I were you I would use a mask vs the eraser.

I'm not sure if my method simply doesn't work for CS or whether my instructions are not clear enough so I thought I'd make a step-by-step guide just in case.
- Open the colour picture in Photoshop Pic 1 (http://homepage.ntlworld.com/n.e.bullock/Step%201.jpg)
- If the window layer is not showing click - Window - Layers Pic 2 (http://homepage.ntlworld.com/n.e.bullock/Step%202.jpg)
- With the layer window now up, right click the layer with your photo in it and select - Duplicate Layer
- Now there should be two identical layers one on top of the other. Select the top layer by clicking on it in the layer window.
- Now click (In the main tool bar) - Image - Adjustments - Desaturate Pic 3 (http://homepage.ntlworld.com/n.e.bullock/Step%203.jpg)
- The top layer should now be black and white, and the bottom layer should've remained in colour.
- Now click (In the main tool bar) - Layer - Add Layer Mask - Reveal All Pic 4 (http://homepage.ntlworld.com/n.e.bullock/Step%204.jpg)
- In the layer window the top layer should now have a layer mask (There should be a white box next to the thumbnail image) make sure that white box is selected by clicking on it.
- Now select the paintbrush tool, from the tool window. And make sure the colour is set to black. Choose the size of brush, obviously the smaller the brush the more accurate you can be, I'd also select a soft brush type, as it will produce better results. Pic 5 (http://homepage.ntlworld.com/n.e.bullock/Step%205.jpg)
- Now paint over the areas that you want to remain colour, the paintbrush acts as an eraser, and brings out the bottom layer's colour.
End result (http://homepage.ntlworld.com/n.e.bullock/LB%20BnW.jpg)

There are so many ways in Photoshop. If you are looking for that "techno color" look like as if you had started with B&W and colored it then you can add a layer above the B&W (however you want to do that) and change that layer's blending mode to color. Then just paint over it with various degrees of opacity (brush wise) to get the effect you want. You get something like this:

For bringing the original color back, this is the way I usually do it.
1. Start with original color image.
2. Add an adjustment layer, channel mixer (this has been my choice of B&W conversion lately, just set to monochrome and run something like red:10, green:45, blue:45)
3. Add a new blank layer on top of that and then select the history brush and just paint back in what you want colored. Remember history brush needs the image to be the same size as it's history state which is indicated on the history tab. Notice that the history brush icon is next to the step you want to get history info from.
I like this way because it's easy to go back and make changes. Here is a sample:

Actually, this is pretty fun. Why paint it back to what it was?

Right then Sikario,
i have tried your instructions and no matter how i try it will not work, i have followed it word for word and looked at the clips you sent too, it's fine up until i go and remove the black and white to reveal the colour, i make sure i have selected the white box, but when it comes to useing the paint brush even at your settings nothing happens, i feel i may as well give up but i don't want to do that as it is something i would dearly like to learn to do, i will keep trying????
