I don't know if this was posted before or not but this is my checklist and what I do before shooting a wedding / event. I have shot over 500+ weddings / events and the following process has yet to let me down!
Usually I start this process the day before the event:
1. Format your CF or SD cards - Saves you the hassle of sorting through the event photos and your personal photos on the same chip.
(make sure your content is already backed up or burned onto a disc before you format!)
2. Sync each of your cameras DATE and TIME together!! - This is extremely important that you set this up and if done correctly you can then sort your photos by date / time and then rename them. Forgetting to do this simple step means you have to then manually sort though your 400-1000+ images.
(also if there is another photographer shooting with you make sure you are synced with them as well!)
3. Charge your Batteries - What good is all the gear in the world if it does have power to run it? Never chance this! - always charge your batteries for your camera and flash the night before.
(also bring your battery chargers with you just in case)
4. Clean your sensor - A clean sensor is always good and saves you the time of not having to photoshop out a dust speck or eyelash from every photo.
(the easiest way to clean a sensor (for me) is to take an air duster and spray at the sensor from a 45 degree angle from both sides)
5. Make sure ALL your gear needed is packed up - Photography gear has a symbiotic relation to itself. If one thing is forgotten (ie if you forget to bring the memory cards or the batteries) all your equipment is then useless - don't carry a brick, make sure you have all the equipment you need with you.
(it might help to make a checklist of the gear you own in detail and then use that as a checklist while your packing it away)
