help understanding folders and paths

I'm hoping someone can give me a little help understanding how to correctly use folders and paths. I have created several exhibitions, but all of my photos are currently in the same directory: mysserver/gallery/ee/photos/. I would like to be able to create subfolders to store each the photos for each exhibit.

Currently my url is http://myserver/gallery. The paths are:
myserver/gallery/ee/photos/
myserver/gallery/ee/photos/normal/
myserver/gallery/ee/photos/microthumb/
myserver/gallery/ee/photos/thumb/

I have tried creating a subfolder: myserver/gallery/ee/photos/gallery1/. I then modified the paths so that my new imported/processed images would go to the new gallery1 folder. That part works fine, but it breaks all of the images in my previous exhibits. When I restore the original paths, all of the old exhibits are fine, but the new one has broken images.

How should I go about creating and using subfolders? Do I maintain a separate list of paths for each exhibit? Any help will be appreciated!

quite simply, yes... my site has some 10 or so exhibits in the gallery... most of them have their own paths... so my paths setup has roughly 10 entries... each different... for those that i want stored in the same path, they use the same entry otherwise, they use their own personal entry...
