Which one is the most used? I don't know what to have it on....

Try one setting for a standard set of test shots. Then review them on the computer. Then try another setting for the same standard set of shots. Review those. Try another setting, and review those.
Now, what do you think? The answer might be different for each photographer. It might even vary depending on the subject matter.

I don't use any of the pre-set parameters - I set up my own under the "Set 1" option with some bumped up contrast and sharpness. It took a while to find just the right settings - but I eventually got there.

Personally i have settled on full sharpness but left everything else standard.
Even though sharpening is a non reversable effect i have had no problems at all with the images i've taken at that setting. In fact it's still extremely rare that i *don't* have to sharpen a pic.
Allthough i have contrast and colour set on standard i'd definitely go up one notch on each if i wanted to print straight from the camera (...but no more than that- the contrast setting changes alot from one notch to the next!)
