Would like input as to handle this situation, shooting under a pavillion roof and having incoming light as backlight to all potential subjects.

fill flash, or overexpose the sky.

I move to where I'm at somewhat of an angle in order to not be so straight on - and then I overexpose the sky. It exists, but I rarely see fill flash in these situations that I like...

The only options I know are expose for the background and flash for the subject, or expose for the subject and blow out the background. If you add light you get to choose how much and where from, just don't use a reflector as they blind people.
