Hello Eddie;
I noticed that when I turn the wheel to set the shutter speed, the numbers are jumping from 100 to 200 , I can't get 125!
Any setting required

Check the owners manual on settings for the DIP switches - Section 4 page 8 here is the link to the pdf file incase you need the manual. http://www.sekonic.com/support/support_21.asp.
I just checked my 358 and all the DIP switches are in the up position. It goes from 100,125,160,200

Check p 16 of the manual - make sure you haven't gone too far into the "intermediate" speeds.

I can set 125 on Ambient mode but not on the Auto reset cordless flash mode

Shutter speed is quite irrelevant for a flash exposure. You do not need to set a shutter speed on the meter for flash-only lighting. The only time shutter speed would matter is if you're trying to measure ambient light and flash (to see the ratio between them).

Hmmm, now that you mention it, that makes sense, since SS is supposed to only control the amount of ambient light that shows up in your image, not how much flash shows up (that's aperture). I haven't tested it, but that would mean in measuring flash output (in cordless flash mode on the 358, e.g.), I should get the same aperture reading whether I dial in 1/60 sec or 1/250, right? The only question remains: why does the manual tell you (on p.16 under the auto-reset cordless flash mode) to turn the wheel and set the shutter speed?
