Ok really if your Flash is on Camera outdoors there is nothing that's really going to help you much in that situation , get your flash Off Camera and shoot it through a Umbrella and now the fun starts .

yeah, an extra flash stand with umbrella works nicely... if you have a helper they could hold the flash and umbrella until you get the hang of it (if you need to purchase anything extra)

Unless you are very close to your subject, fill flash in sunlight thru any modifier at all will limit your distance!

Imagine that your Sigma 500 has a GN120 at ISO100 with a 'normal' lens (good approximation, as 580EX has GN130 at 50mm) In bright sun, the Sunny 16 Rule says 1/100 f/16 at ISO 100. At f/16 you can equal the sun's brightness only to 7.5'; or you can provide -1EV fill out to 11', and both of those is using NO MODIFIER! If you lose -1EV from a modifier, suddenly you equal the sun brightness to 5.5' or -1EV fill to 7.5', which is likely not far enough!
