I have a Digital Rebel 350/XT and Photoshop 7.0.
What is the best and/or easiest way to work with raw.

You used to be able to buy a RAW plugin for PS7, not sure if you can any more.
Download the free and excellent RawShooter Essentials (http://www.pixmantec.com/products/rawshooter_essentials.html&e=9797) and use that for the conversion to TIFF or JPG. If you need to do more work convert to TIFF and open that in Photoshop. If you just want JPGs, it'll do that for you.

The BEST way is a matter of choice. Unfortunately Photoshop 7.0 is no longer one of those choices for the XT. The only Photoshop(s) that will convert XT RAW are Elements 3 and CS2. For those you simply download and install the ACR 3.1 plugin available free from Adobe.
HOWEVER ---
When you download that plugin, you get along with it what I understand is a free standing program, Adobe DNG, which will read and convert the XT RAW, and I assume you can then further process the pictures in your Photoshop 7.0, but I don't know that for sure.
I have seen lots of questions about DNG, but few answers on this or other forums.

You can use DNG to convert you proprietery RAW files into a standard RAW format. There is not a lot of support for DNG right now outside of Adobe but you could use it to convert your XT files and then use the RAW converter (I believe PS7 ACR converts DNG) in PS7 to develop your RAWs.

Simply use DPP that came with your XT to convert from RAW to TIFF, then use PS7.
