I remember reading about a process that some people use, particularly with pictures of the moon, where you take several very similar images and merge them together with either a PS plug-in, or some dedicated program. The result is a very clean and detailed image.

Where have I seen this? I've Googled and searched through my old bookmarks and can't find a reference.

Do you mean one that stiches the photos together, like a panaroma, or one that helps extend the apparent dynamic range of the image?

Malcom is probably referring to the technique of compositing several severely underexposed images together to simulate a single, longer-exposure. This is a popular technique used in astrophotography. Try googling from "composite several images astrophotography". I found this article (http://www.dl-c.com/astro.pdf) for example.
