This question needs to be defined a bit more, what do you want to add?
If it is your name than use the Canon EOS Utility software, look for the little wrench like icon (Tools) to add this info.
If you are looking to add copyright, keywords, and similar information Photoshop (at least CS versions) can do so under the File:Information: tabs I believe. Other applications like Aperture can also do so.
If you are looking to write over shooting data than a differing application is needed. I don't have any recommendations for this but have seen others recommend or comment of differing applications on the site, a search should turn something up.
If you are concerned that your images do not have exif data embedded than look to your method of saving the image, the "Saving for the web" type function strips exif data to lower the file size, choose a different method of saving and the data will remain.
