I would do the shoot, but not give her any type of images until she pays in full, not even low-res, watermarked proofs. When she pays in full, then turn over the images to her.

First: Order more ink..now. Prints are what makes the dough in portraits.
Second: Read kevin's post
Third: Do what Kevin says.

I'm dealing w/ this right now. It was a friend from my wife's work. I did the portraits after working a 24 hour shift (I was beat). Spent about 90 minutes from start to finish and 3 locations. They e-mail about 2-3 times per day wanting to see the proofs. I told them when I see a full check, then they'll see the prints. I feel bad because the daughter is stuck in the middle. However, business is business.

Do the shoot, but no processing until you're paid.

Usual would be a non-refundable deposit in advance to reserve your time... Maybe 1/3 of the sitting fee. Nothing is contracted until the deposit money changes hands.
Then another 1/3 of the sitting fee on the day of the shoot, usually due to you before you start.
Final 1/3 would be due upon delivery of the proofs. This assures them that you will deliver the proofs in a timely manner.
Any print orders are a separate issue. For example, maybe your sitting fee includes a few prepaid prints and/or some digital files. That's up to you. (Just be careful not to underprice yourself.)
