Hi,
I would like to play around with seamless white backgrounds for product stuff (stock photos). Wondering if I should be blowing out the white completely eg 255 or keeping a little detail.
Any tips would be appreciated.

Understood, usually in product photography the BG is not the subject, far from it. The subject needs to be the main focus. I usually try to let the BG go when I'm shooting something against it whether it's black, white, grey or whatever. But especially white, blow it up! The darker colors are sometimes nice with some texture to them IMO.

Just checked out a couple of shots similar to what I want to achieve in photoshop, they were all blown out to 255.

I found this posted elsewhere this morning: http://www.zarias.com/?p=71 It is a 5 part tutorial on shooting with white seamless. Some amazing work. He touches on product photography in one of the later parts.
