Is there a way to have the camera automatically place copyright info into the data of the picture at the time the picture is taken?
I am new to photography. I will be using Photoshop Elements 3.0 for organizing and editing photos.
Any help will be greatly appreciated.

From the camera you can use Canon Zoombrowser to change the "Owner" field (see attached file). To update the copyright field you need a piece of software like "Exifer". To learn about Exifer go to http://www.exifer.friedemann.info/.
