Working from a 300D here, but I'm sure the 350 (XT) is similar. If you turn the dial to Tv mode, you should be able to change the shutter speed with the roller wheel (on the 300D, it is just behind the shutter release button).
I'm trying to remember, but I don't think anything happens until you "wake up" the auto systems by half-pressing the shutter button. Once the current settings show up on the LCD (or at the bottom of the viewfinder, if looking through there), you should be able to change the shutter speed with the wheel to your heart's delight.

If you are in Tv mode the main dial near the shutter button will change the shutter speed.

if you are in TV mode, turn the main dial (right behind the shutter release button) to change the shutter speed.

Hello oakmeadows,
No need to worry about asking questions, no matter how basic. Everyone here started once and this forum provides a friendly place for us all to share experiences and help each other. I hope you'll enjoy it and your new camera which was a very good choice and one which will afford plenty of scope for you to grow in knowledge and experience with.
Best wishes, David :)

no need to feel stupid. if it helps you feel any better coming from an olympus om1 to an autofocus camera it took a short while to get used to the twiddly bits on the eos camera i have now. but then i picked it up fast and its easy now :)

Welcome to the forum........I know you might feel like a dumb newbie when asking questions (I know I did in the beginning), but just remember this.......most people probably asked the same questions in the beginning....and if they didn't ask them, they probably wanted to!!
Thats what the forum is here for!
