I have been shooting with the EOS 1d Mk II in Switzerland all winter and just cannot get ski pics with a really blue, intense sky compared to other traditional media. Is this just a digital thing or are there some settings I can tweak?

This photo is really oversized and heavily pixilated.

Other than that, the composition seems adequate and I cannot comment on anything else.

Blast the guy with a flash and underexpose the background.

.... and depending the location of your subject and its relative position of the sun, try a polarizer ...

The shot looks well exposed without much sign of grey snow (the most common mistake). I'm afraid we digital users are expected to use Photoshop to bring out the colours that we really want to see. For $25 you can buy "Velvia Vision" (a Photoshop action) from fredmiranda.com that will do wonders for the vibrance of your colors without you having to become a Photoshop guru.

Just had a bit of a play with your image in Elements but can't understand what's happened to the sky.

Best thing I can suggest is you delete the sky area with the Magic Eraser Tool and substitute it with a plain blue layer.
