Its pretty rough and I will be adding a lot more photos to the portfolio section as well as adding more info to the about me section. But I would like to get some C&C to help me make it better.

Simple. I like simple. I would lose the hit counter, though. They are so '90's. I would also change the "About Me" image, too. Just my personal opinion.

I like the layout, it is straight to the point and the colours work pretty well.
I don't like the red rollover colour though, when you hover over a menu icon. I think the rollover text should be white, to match the body text.

Speaking of the body text, i don't really think that it's formatted very well, if you clean up your presentation there i think it will really bring everything together.
For example where it says 'My work can be found in the following books, publications and websites:' don't separate the examples using <p> tags, use lists! It's what they are there for. <ul>
<li>The Kind Diet by Alicia Silverstone</li>
<li>Vegan Bodybuilding and Fitness, The Complete Guide to Building Your Body on a Plant-Based Diet by Robert Cheeke</li>
</ul>

Once you've got your list, you can play around with the CSS a bit, you can keep it simple and classy like the overall design. It will just tidy it up a lot more.

You might want to give http://www.webdesignerdepot.com/2009/02/10-web-typography-rules-every-designer-should-know-2/ a quick glance over. It might inspire you :)

This might just be me, but I would consider changing your email address to one without periods.

R.Perez.Photography@email can cause many people to get it wrong because of the 2 periods. Perhaps just RPerezPhotography@email?

Randall,
What you have done so far is really good and beyond my capability, so I wouldn't dream of telling you to change anything, it looks sophisticated and I am sure will be a great success, well done.
Here is my only observation:-

I have a screen that is slightly more than 20 inches wide, yet your web pages occupy only about eight inches of that right in the middle, I could not find any way to view your stuff full screen or in fact anything bigger than they already are, did I miss the link? I hope so because your stuff should be capable of being enlarged. that's it, once again, good job.

Your main URL is way too long, whilst it's a minor point it's still a issue to be addressed.

The site feels bland/boring. There is nothing that makes go wow, hire that photographer. To be blunt it feels and looks like a canned template.

Set up a contact form, that way people will be able to reach you.

Typography has already been mentioned.

You also have too much dead space in your design, space that can be used far more effectively.

QFT. Please, lose the counter.
