In case anyone hasn't seen it, Jeff Schewe has written a post over at the Rob G forums, which explains that the correct procedure for WB in ACR is not to use a gray card or doppelganger for one, but to pick a "three-quarter tone white".
It seems that this would be around Lab 81. In ProPhoto RGB: 190..., in Adobe RGB 200..., in sRGB 202...
