As it may seem a strange question, but is it possible to shoot B&W images with the 1ds aside from converting the file in PS?

No, and you probably don't want to. One of the neat things about converting to BW in Photoshop is that you can apply a "filter" at conversion time. So you can see how the picture looks with a red, green, yellow, orange, or whatever filter, or even roll your own. If converting in the camera, you would need to own those filters, and you would be stuck with the result.
