Okay. I have an 8 gigabyte Ultra III compact-flash (CF) card right? Now I'm looking to get a couple more Sandisk cards. Some of them say Extreme II or III and are 30 megabytes per second. Others simply say Extreme Professional and are 60 megabytes per second.
How do you tell which one is better?

The Extreme (no number) are the newest ones. I think that what you have is the Ultra II, not III. It was contemporaneous with the Extreme III and later the Extreme IV. All three of those came in different versions; the later ones have MB/s printed on them and the fastest Extreme IV cards got up to 45 MB/s. But any of the Extremes (or the current SanDisk Ultra, no number, 30 MB/s) will be plenty for your 40D. It's when you move to a newer, higher resolution, camera that you'll want something faster.
Check out Rob Galbraith's CF Speed Test for the 40D (http://www.robgalbraith.com/bins/camera_multi_page.asp?cid=6007-9257). The current Ultra is around the performance of the Extreme IV that he tested.

Kind of, they seem to have gone back to just calling the latest UDMA cards extreme and extreme pro. The others are still listed on sandisk site, so not discontinued afaik..
If you have a fast reader, firewire, esata or expresscard you will get nice fast downloads to your computer with the new cards, but they aren't going to make any difference to your cameras performance.
edit: just reading on sandisk site, the new cards are all built with silicone padding, so they should be robust like the old extreme3 and up cards, so considering the price of the new extreme is more or less the same as the extreme3's, no brainer really :)

They've simply rebranded their cards. There used to be a naming scheme, but now it has been replaced by a new naming convention. Your'e probably getting confused because some of the older ones are still on the market and will probably be so until they are all cleared out.

They've had multiple product lines before this. The old lineup was regular (I refer to them as SanDisk Blue), Ultra II, Extreme III. They added Extreme Ducati, then essentially renamed that Extreme IV. The Ultras and Extremes later got a speed boost, and have now received another boost along with new names (Ultra, Extreme and Extreme Pro). The SanDisk Blue remains, and they've added (for SD) SanDisk Video HD and SanDisk Netbook cards to the line.

Also, the new Extreme Pro is faster than the Extreme IV, but the Extreme is slower than the Extreme III (Even though it's rated faster).

The Extreme slower than the Extreme III? There's no way...
I have the 8gb Extreme, which is 60mb/s vs the Extreme III's 30mb/s, and it is WAY FASTER than the 8gb Extreme III I borrowed from a friend last weekend.

Interesting, where did you see that information ? I plan on the extreme 60mbs cards for my next cards, being udma and rated quite a lot faster than ext3's thats quite suprising to hear..
