Snow! Acck! help

I have to take pictures of a black dog outside in the snow this weekend. I'm a bit freaked out. I have a lot of problems taking pictures of snow let alone a BLACK dog in WHITE snow!

Help! Tips, tricks, pointers?

When I shoot a scene that's mostly snow I usually use Av with exposure compensation at +1.67 or +2. That'll blow out the brightest snow and perhaps expose the non-snow decently. Adjust as needed after chimping.

You might experiment with AEB also (along with the + EC).
