Welcome to POTN :)
AFAIK you can't do it in the camera, you have to do it in photoshop or a similar program. On the 20D you can do it in the camera, but you get a lot more control doing it in photoshop.

As Tim as just stated - Even if you could shoot B+W 'in-camera', you will have far more control over your results if you use Photoshop (or similar).
You could even leave your shot as full colour if you really wanted :)

Shoot Raw and jpeg. Set the parameters to B&W if you can. That way you have an instant B&W and the Raw file to make color or a better B&W if you so choose to. The Raw file isn't affected by the parameters.

Uhhh, 300D doesn't do black and white, at least not within the camera.

That's why I said "If you can", Bob. I don't usually read the manuals on cameras I don't own. I have however progressed to reading the manuals on the ones I do.

Your 300D probably came with PS Elements-2 bundled with it.
In Elements, open the colour image you want to change to B&W. Click "Enhance" and then click "Adjust Colour" in the drop-down menu then click "Remove Colour".

In Elements you can also change the Mode to Lab and discard the a and b channels leaving only the luminance channel.
